This coffee is sourced from family-owned farms organized around the Agraria de Productores Ecologicos San Ignacio (APESI). Almost a mile high up in the Andes of Cajamarca, each producer cultivates coffee tree varietals such as Bourbon, Pache and Mundo Novo in the fertile volcanic soil on their small plot farms. APESI provides training and financing aimed at improving organic production resulting in increased coffee quality and yields. Their efforts qualify them for Fair Trade and Organic certification and increases farmer earnings.
